Peter and his wife Stella, Gary’s parents, are also the founders of Acropol Inn Restaurant in Clearwater, established in 1979. Immigrants from Greece, Peter and Stella arrived in Florida with a vision to build their own business.
“My dad came from Greece with nothing – no language, no money, just a dream to open a business. He worked incredibly hard. He truly lived the American Dream,” Gary reflects with pride. This strong work ethic was instilled in Gary and his siblings. “My parents taught us the importance of hard work and making something of ourselves,” he says. Gary’s upbringing was deeply intertwined with the restaurant business. He recalls doing homework in booths at his parents’ Clearwater location and gradually taking on roles within the restaurant as he grew older.
The family’s dedication remains central to the operation. Peter still visits the Largo restaurant daily, enjoying breakfast and connecting with customers. Stella primarily manages the Clearwater location. Gary’s wife plays a vital role, managing the cashier duties in the afternoons and evenings, allowing Gary to balance work and family life by picking up their children from Plateau Academy and assisting with homework.

When asked about the secret to Acropol Family Restaurant’s enduring success, Gary’s answer is immediate: “Hard work, experience, and amazing staff.” He emphasizes the loyalty and dedication of his team. “We have staff members who have been with us for many years. One waitress has been here for 17 years, starting at our Clearwater restaurant. One of our cooks has been with us for nine years. Our team cares deeply about the food they serve and, most importantly, our customers.”
